Plum Cake

It's one of the simplest dessert recipes that I know, and I highly recommend it to try if you are a beginner.

If you don’t have plums, you can use other fruits.

Ingredients

  • 170 g soft butter (room temperature)
  • 3 big eggs
  • 12 g vanilla sugar
  • 150 g sugar
  • 170 g yogurt
  • 280 g all-purpose flour
  • 10 g baking powder
  • 750 g plums

Directions

  1. All the ingredients will be at room temperature. Put them in order, except for plums, while using a mixer.
  2. When everything is well mixed, put the mixer aside and add the plums to this batter. About 750g of pitted and halved fruit should do the job, but it’s not a big deal if you have a few more or less. Stir them in gently.
  3. Line a springform pan (about 24cm) with baking paper, add the batter, and top with 2-3 tablespoons of sugar. Bake at 180 degrees in the oven for about 45 minutes until golden brown. Make sure you do the toothpick test (if the batter sticks to it, it’s not ready yet). If it’s not cooked through, bake for another 10 minutes. Very simple, hard to make it wrong. Bon appétit!
